A Fresh, Summer Whisky
Established in 1923, The House of Suntory is Japan’s first and most famous distillery. Originally inspired by traditional Scottish whisky, the approach for Suntory’s award-winning whiskies lies in the dream of crafting a subtle, refined and complex whisky that would suit the delicate palate of the Japanese people and match well to their artful and complex cuisine. Stylistically this means you’ll find less peat and smoke, and more floral, woodsy and citrusy notes. Their newest creation, Toki – which means “time” in Japanese – is a blended Japanese whisky that will make for an excellent summer tipple. Light and fresh, it has a bright nose of uplifting green apple, basil and honey. On the palate it is fruity and light with pink grapefruit flavors followed by hints of vanilla oak, white pepper and ginger. While you can certainly enjoy this whisky neat or on ice, Suntory designed Toki to mix in highballs, which entails mixing a few ounces of whisky with a few ounces of club soda (lemon spritz optional). You can think of it as a whisky that will help beat the heat!
