- 1/2 Cup Mayonnaise
- 4 Soft Shell Crabs (cleaned)
- 1 Cup Flour
- 3/4 Teaspoon Old Bay Seasoning
- 1 Teaspoon Black Pepper
- 1/4 Teaspoon Course Sea Salt
- 1 Egg
- 1/3 Cup Milk
- 1 cup Canola Oil (or as needed)
- ½ Pound Porcini Mushrooms
- 2 Cloves of Garlic chopped
- 4 Thick Cut Bacon
- 10 leaves of Basil
- 1 Fresh Tomato sliced
- 4 Model Bakery English Muffins.
- Salt and Pepper to Taste
In a large dish, combine flour, Old Bay seasoning, pepper and salt. In a large bowl whisk together egg and milk. Heat up a deep fryer, or a pot of canola oil to 360 degrees. Coat crabs gently in the flour/spice mixture, shake off excess flour, then coat in the egg/milk mixture and then back into the flour mixture to coat again. Shake off excess flour and place in deep fryer. The crabs will tend to float in the fryer so use a basket or kitchen utensil to keep them submerged in the oil. Fry about 3 minutes or until golden brown – remove and let drain on a paper towel lined plate.
Heat a large skillet over medium-low heat and add the bacon, using a skillet or bacon press to keep it flat as it cooks. Cook until lightly browned on first side, about 5 minutes, then flip, cover again, and continue cooking until bacon is browned on both sides and fat has rendered, about 3 minutes longer. Transfer bacon to a paper towel–lined plate and set aside.
In the same skillet over high heat with the bacon fat add in the porcini mushrooms. Season lightly with salt and pepper and cook until tender, about 4-5 minutes. Add garlic and cook for one additional minute. Remove from the mushrooms and garlic from the pan.
Place Model Bakery muffins on same skillet or griddle and toast in bacon fat over medium-low heat, swirling occasionally, until evenly browned on first side.
Lay the toasted muffin on a work surface and spread mayonnaise on both top faces. Divide basil evenly between both pieces of bread. Layer tomato slices on one piece of bread and sprinkle generously with coarse salt and freshly ground pepper. Layer the bacon, crab, and mushrooms onto the muffin. Salt and Pepper to taste. Close sandwich and cut in half diagonally. Serve immediately.
