For the past decade, Tuthilltown Spirits has tapped into a rich pre-Prohibition tradition of New York distillation. In 2001, Ralph Erenzo and Vicki Morgan purchased a 220-year-old gristmill and teamed with technical mastermind Brian Lee to convert the building into a micro-distillery. They started with vodka, and have gone on to produce New York Corn Whiskey, Baby Bourbon Whiskey.

The new label reflects Early Times’ strong history and Kentucky heritage. In fact we put the map of Kentucky right on the label so consumers have no doubt about where our whisky comes from. It also highlights our oak barrel aging, one of the reasons Early Times has such a smooth, rich taste.

Forty Creek Whisky is distilled in small batches in our copper pot still and patiently aged in white oak barrels hand-picked for their unique characteristics. A selection of light, medium and heavy char barrels create a richness and toasted earthiness in the spirit. This unique barrel selection process results in a whisky where aromas of honey, vanilla and apricot fuse with toasty oak, black walnut and spice.

It’s what a whiskey experiences while inside the barrel and not simply how long it’s been there that gives it the rich color, character, and taste that we call mature. Mellowing our whiskey through ten feet of sugar maple charcoal, crafting our own barrels, and placement in the barrelhouse—each contributes to how our whiskey matures. Age by itself isn’t a reliable measure of a whiskey’s quality and character. Which is why our tasters tell us when the whiskey is ready. We judge its quality the same way you do – with a sip.
