Dalton- Special Edition, "Alma" Cabernet Sauvignon-Merlot, 2007

The grapes were selectively picked in late September and early October. The grapes came from separate vineyards that were picked and fermented separately.
Once the aging was complete, each parcel was individually tasted and the final blend of 56% Cabernet Sauvignon 25% Merlot and 19% Cabernet Franc was made.
Alma is a dark full-bodied wine showing generous aromas of cherries, plums and sweet dark fruits with a buttery palate offering essences of vanilla, cloves and green tea.

Covenant, Cabernet Sauvignon, 2007

“The 2007 Cabernet Sauvignon possesses the finest fruit of any wine to date. Its dense ruby/purple color is followed by aromas of creme de cassis, spice box, cedarwood, and subtle smoke. A classic Napa Cabernet Sauvignon, with a full-bodied texture and lush, silky tannins, it should drink nicely for 10-15 years.”

A very special bottling of cabernet from Sonoma County’s pristine Alexander Valley, where cabernet is a bit leaner, with tighter structure than those from neighboring Napa Valley, but still rich, full-bodied with some hints of black cherry, anise, herb, and chocolate.
